Bitter Melon Fritters
(4 servings)
- 1 piece Bitter Melon/Gourd (sliced thin) and salted to taste
- 1/3 tsp Black Pepper
- 1/2 tsp Chili Powder
- 3/4 cup Rice Flour
- 1/2 cup Water
Soak the bitter melon/gourd for 20 minutes, in a quart of water with 1 tbl spoon of salt.
Change the water and soak one again for another 10 minutes.
Strain thereafter and dry on paper towel.
In a bowl mix rice flour, pepper, salt and chili powder.
Add the bitter melon/gourd in the bowl and then fry the bitter gourd in a deep flat fryer till crisp.
