Thyme Roasted Potatoes
(1 serving)
- Olive Oil 1/3 cup
- Potato (cut into long stripes) 1 large
- Coriander seeds ½ tsp
- Cumin seeds ½ tsp
- Mustard seeds ½ tsp
- Thyme 1 sprig
- Salt to taste
- Pepper to taste
Preheat oven to 375 degrees
On a sheet tray, place the potatoes with salt and pepper drizzle olive oil on top
Bake for approximately 20 minutes
Heat two tbl sp of olive oil in a pan on high heat
Add the spices and let them infuse in the oil for 20 seconds
Add the potatoes; toss them in the pan with some thyme
Add salt to taste.
Sautee for a minute and they are ready to eat.
Adaptation
For my toddlers, I puree this preparation in a food processor
